Hi,

and welcome back :-) I'm a breakfast person and because my schedule is busy in the morning everything has to go pretty quick.

I was looking for new ideas and wanted to switch from oatmeal to something new.

Smooooothiiie bowl it is.

100 of different flavors and I picked a green one.

Ingredients:

1 banana

150ml of milk ( I use almond milk)

2 tbs natural peanut butter powder

4 cubes of ice

2 cups spinach

Toppings:

1/4 ezekiel cereal

+ your choice of fruit

What I have to say about toppings be creative change it, put some chia seeds and coconut flakes or add some chocolate pieces.

Get together the banana, milk, pb powder and the ice. Blend it well and add the spinach and blend again until everything is smooth.

And yes thats it.

Toppings:

My new favorite is the ezekiel cereal that is full of protein and good fats from the seeds plus no sugar adds a perfect crunch to the bowl. Have your favorite fruit on top and ready is the easy smoothie bowl. It maybe takes 5mins.

Love to hear how it went and if you guys liked the recipe.

Hi everyone,

okay I know I haven't been posting a lot yet and not in a rhythm but I still learn and have to get use to it.

This week two new posts are coming :)

Last week lunch was awesome and the first time I made it. So there is another quick and easy lunch idea for you.

Ingredients

4 red bell peppers

ground Chicken breast

a box of Tomatos (or 4 big ones)

1 bag shredded mozzarella cheese

onion powder

garlic powder

salt

pepper

Goya all seasoning

Bag of brussel sprouts

Olive oil

Prepare the chicken with all the seasonings in a large pan until the meat is not raw anymore. It takes around 8-10 min. Cut the bell peppers in half and clean the inside. Preheat the oven to 400F. Fill the peppers with the meat and top it with cheese. As much as you want :D

In the oven for 15min until the cheese is all melty and yummy.

The brussel sprouts I had as a side. Wash, cut the ends off and half them. In another large pan put some olive oil and the onion powder. You can season the brussel sprouts however you want I prefer salt, pepper and garlic powder. Because I made the whole bag of them it took longer to have them cooked.

The tomatoes I cut in half and top my filled pepper with it. If you want you can make some quacamole with it for some extra healthy fat.

Let me know how you like it and leave me a comment.

Hi and welcome back! New week new lunch ideas. Okay I didn't came up with the idea but whoever did. Zucchini Lasagna is awesome!!!

Because of a Holiday in America I was off monday and did my meal prep today (Tuesday). I always look for simple and quick stuff and because I love zucchini I found that recipe.

Ingredients:

1 pack of lean Turkey meat

1/2 tsp dried oregano

1/2 tsp dried basil

1/4 cup chopped onions or dried onions

1/4 tsp salt

1/4 tsp pepper

1 1/2 cups tomato sauce

1 large egg

1 cup 2% cottage cheese

6 small zucchini

3 tbsp all-purpose flour

1 cup shredded part-skim mozzarella cheese

and yes there is spinach on the picture you can add it for extra green, I didn't because it was already pretty green.

Directions:

Preheat Oven 375°. Crumble the turkey in the pan an cook it over medium heat until no longer pink. Add the onions and the seasoning( Salt, pepper, oregano, basil) and the tomato sauce. Bring to boil, simmer, uncovered for 5 minutes. In a bowl, mix the egg and cottage cheese.

Cut the zucchini in thin slices. I prefer it super thin because then they are good cooked and soft.

Lets get it all together :)

Coat the baking dish with cooking spray and dust it with half of the flour. Top with the cottage cheese, next some of the meat sauce , layer of zucchini, some cheese and repeat.

Until everything is used. Sprinkle on top the mozzarella.

In the oven for 40min uncovered and let it stand for 10 min before serving.

Et voilà.

Some love for the rest of the week and let me know if you like the recipe.
