Quick and easy lunch idea

Hi there,


first Post on my FOOD page about a recipe from this week lunch for me and my boyfriend.

A Quinoa, Zucchini, Carrots and Feta Pot.


All you need:


3 small Zucchini

3 big carrots

1 1/2 cups uncooked Quinoa

1/2 cup Feta

1 tbs unsalted butter


For the quinoa bring water to boil, add and simmer for 15mins. Zucchini and carrots either cut in small pieces or use a spiralizer like I did. In a big pot bring the butter to melt and add the veggies to saute them. Salt and pepper for the seasoning in the pot with the veggies and the cooked quinoa. Mix all together and serve in a bowl add the feta on top and enjoy.


This recipe is super fast and definitely good for 8 servings or more.
